I remember as a kid, joking with my mom about the fact that cake has eggs so I could eat it for breakfast! I’m sure we’ve all heard a version of that ‘story’, sometime in our lives. Well, here’s a cookie that I honestly wouldn’t be too ashamed of eating for breakfast. These Protein Packed Paleo Chocolate Chip Cookies aren’t just for dessert!
A Treat Is A Treat, Is A Treat
Now granted, I wouldn’t eat these daily. And I most certainly wouldn’t feed these to my children for breakfast (on the daily, anyway) but you can almost feel good about eating a cookie that isn’t filled with tons of sugar, grains and/or gluten!
I don’t count macros. Honestly, I don’t know how much protein are in these cookies but I do know, that there is collagen, cashew butter, flaxseed and eggs. I know each of these ingredients are a-o-k in my book! I use non-flavored collagen but I would imagine these would be amazing with Vanilla Flavored Collagen!
Give Me All The Collagen
Primal Kitchen Foods carries my favorite collagen. I use the Vanilla Collagen Fuel daily, in my coffee. And around the Christmas season, I will use Chocolate with a dab of peppermint essential oil for a yummy and healthier version of a Peppermint Mocha! I love to take every opportunity and add collagen into a recipe, wherever I can. I slip it into savory foods and sweet treats whenever possible. These Protein Packed Paleo Chocolate Chip Cookies started out without the collagen. But then I realized I ‘had the opportunity’ ….so why not?
This Chocolate Chip Cookie Dough is no exception. Seriously, get the collagen in when you can! You can omit the collagen from this recipe but why not get a little bit in here and there? Btw, this dough is AMAZING so if you have ever been one of those to eat the pre-made Tollhouse dough right out of the package, then this one is for you!
Why Collagen?
So why do I love to sneak in collagen? In short, taking collagen is associated with a number of health benefits. First of all, I LOVE that this supplement may improve my skin by reducing wrinkles and dryness. It has also helped my hair in health but also growth! And while I don’t love that I have to keep clipping my fingernails, they grow quickly and are very strong. Collagen also helps relieve joint pain. It’s most certainly helped me with my arthritis. It also prevents bone loss which is huge as we enter menopause.
As you can see, there’s no harm in adding a supplement to a cookie, that will aid in healthy benefits. These Protein Packed Paleo Chocolate Chip Cookies can be a delicious treat, but we can also feel so good about eating them!

Protein Packed Paleo Chocolate Chip Cookies
Notes
*Using 3/4 cup coconut sugar offers a very subtle sweetness. Up the amount if you prefer a sweeter cookie. My intention was to make a ‘not-so-sweet’ cookie ….so feel free to add more sugar, if preferred!
Ingredients
- 1 cup cashew butter
- 2 eggs
- 2 tbsp melted/cooled coconut oil
- 1 tsp pure vanilla extract
- 3/4 cup coconut sugar*
- 2 tbsp flaxseed meal
- 2 scoops unflavored collagen
- 1 tbsp tapioca powder
- 1 tsp baking soda
- 1/4 cup mini dark chocolate chips
Instructions
- Preheat oven to 350°
- In a medium size bowl, mix together the cashew butter, eggs, coconut oil and vanilla extract.
- In a another bowl, whisk up the coconut sugar, flaxseed, collagen, tapioca powder and baking soda. Pour wet ingredients into the dry ingredient bowl and combine.
- Mix in chocolate chips with a spoon.
- On a parchment lined cookie sheet – use a small scooper and place dollops of cookie dough onto the sheet. Use the back of the spoon to flatten a bit. (get the spoon a little wet so it doesn’t stick to the dough)
- Bake at 350 degrees for 12 minutes.
- Cool on cooling rack and keep stored in fridge!
