My husband walks in the other day and says, “Starbucks has their Pumpkin Spiced Latte out already – let’s go get one!” Honestly? I am in full throttle summer mode still and couldn’t get on board with his suggestion. I ended up talking him into waiting until at least September rolled around before jumping on the pumpkin train. That said, I felt like I need to get a Pumpkin Spiced Latte recipe going that was both Keto and Paleo. I’m so over spending over $5 for a coffee that is filled with crap. And that’s how this Keto and Paleo approved Pumpkin Spiced Latte was born!
I will admit, the winter drinks will probably be out soon enough so making these Pumpkin Spiced Lattes isn’t a bad idea. Let’s be honest, Christmas decorations come out earlier every year! I venture to say that your local coffee house will be advertising their Peppermint Mochas sooner than later! And speaking of which – if you’re into those drinks as much as I am, here’s one for you! Much like the Pumpkin Spiced Latte, this Peppermint Hot Chocolate will give you all the feels without the junk that most coffee houses will use. Add coffee and you’ve got a Peppermint Mocha!
Health It Up!
One thing I do like to add to amp up nutritional value, is collagen. The Pumpkin Spiced Latte doesn’t have collagen added to the recipe but please feel free to add a scoop to take this drink up a notch! I suggest unflavored but I do believe Vanilla Collagen Fuel would be delish! (just adjust the sweetener in the recipe a bit if using the Vanilla Collagen). I use the Chocolate Collagen Fuel for the Peppermint Mocha above and it’s the perfect addition to an otherwise, sugary-ladened drink. The bottom line is to take the traditional drinks, tweak the ingredients a bit and add in health boosting supplements! Get it in where you can, is what I always say 🙂
Welp, I’m going to end this here and get to making a Pumpkin Spiced Latte for my hubby! He’s all over these drinks and I’m sure he’ll be happy to wake up to one. There are simple adjustments to this recipe to make it keto and/or paleo. If you’re one to get into ‘all things pumpkin’ sooner than later, I suggest whipping this latte up today! It’s so simple and can be made up while your coffee is brewing. It’ll save you money from having to get one at the pricey coffee places and it’ll save you time!

Pumpkin Spiced Latte – Keto|Paleo
Notes
Add one scoop of unflavored or vanilla* collagen for a nutritional boost.
**If using vanilla collagen, adjust the maple syrup sweetener by omitting all together, taste and add in 1 tsp at a time until desired sweetness is achieved.
Ingredients
- 1 1/4 (10 oz) cup freshly brewed coffee
- 1/4 cup coconut cream (or heavy cream for keto/dairy users)
- 2 tbsp pumpkin purée
- 1 tbsp ghee
- 2 tbsp Birch Benders Maple Syrup (or 1 tbsp regular maple syrup for paleo)
- 1 tsp pumpkin pie spice
- Optional: Collagen* (See notes below)
- Top with sprinkle of cinnamon and/or whipped or coconut cream
Instructions
- In a small sauce pan, whisk all ingredients (except coffee) on low heat.
- Whisk until fully combined and warmed through. Add collagen if using, whisk through.
- Pour into a freshly brewed mug of coffee. Using a small whisk, combine the pumpkin mixture with coffee. (Alternatively, pour coffee into saucepan and combine – pour ‘latte’ into your favorite mug).
- Top off with a sprinkle or cinnamon and/or whipped heavy or coconut cream!
