So what the heck are Scotch Eggs??? Not going to lie. I had no idea til I ordered them at Gordon Ramsey’s Restaurant in Vegas. They were delish! It’s basically a hard boiled egg, wrapped in meat. That pretty much sums it up! I tried making them many years ago but I wasn’t sold on how they turned out. Something reminded me of them the other day, so I got back in the kitchen and whipped up these Scotch Eggs, which are are paleo & gluten free! I got 2 thumbs up from the fam so here I am, sharing the recipe with you.
I made these Scotch Eggs in both the oven and air fryer. They both turn out great but my preferred method is the air fryer. The outer “egg” gets so crispy in the air fryer …but if you don’t have an air fryer, the oven works perfectly and I promise you, they are scrumptious!
You can use whatever coating you have on hand or prefer but I used the Paleo Powder Seasonings Mix. There are a few mixes to choose from but I used the Almond + Flax Seasoning. I think pork rinds ground up would be equally as delicious, as well as any other flour you might have on hand. With the Paleo Powder seasonings, you won’t need to season your coating so that’s a win-win for ease!
As for the eggs. I hard boiled mine but next time I make these, I will be soft boiling them. I like the idea of the yolk being a little “drippy”, if you will. And we have to take in consideration that the eggs go back in the oven or the air fryer. I would imagine you could pan fry these Scotch Eggs but I don’t have advice on that method as I’ve not tried it yet. If you do, let me know!
I hope you give these Scotch Eggs – paleo|gluten free a try! I think you’ll find that you can enjoy these as an appetizer, for breakfast or to top off any salad! They are pretty filling so plating these for dinner with some veggies on the side isn’t a bad idea what-so-ever!
Have fun with them and let me know what you think!
Scotch Eggs – paleo|gluten free
Ingredients
- 1 lb sausage and/or chorizo (I used both mixed together), alternatively 1 lb any ground meat
- 6 hard or soft boiled eggs
- 1 cup breading (such as pork rinds, Paleo Powder Seasonings, almond flour …)
- 2 eggs, whisked
Instructions
- If you are using both sausage and chorizo as I did, mix 1/2 pound of each meat together.
- Dry off the hard/soft boiled eggs and set aside. Whisk 2 eggs in a small bowl and put the coating into another small bowl
- Take the ground meat and divide into 6 shares, equally. Once divided, flatten out them out individually on a cutting board.
- Place an egg onto each meat portion. Use 2 hands to mold the meat around the egg, carefully making sure that the meat is evenly wrapped around the egg. Continue with the remaining 5 eggs.
- Using the air fryer, lay the eggs in container and cook at 390 degrees for 12 minutes. Carefully turn over at 6 minutes and continue cooking.
- Alternatively – preheat oven to 400 degrees. Lay the Scotch Eggs on a parchment lined rimmed baking sheet. Bake at 400 for 20 minutes.
- Let cool a few ….and dig in!
