I think this is going to become a thing for me. Sheet pan meals are the way to go! This ‘Sheet Pan Salmon & Veggies {paleo, whole 30}’ is so simple and I LOVE that sheet pan meals take only one pan — so less dishes! Who doesn’t love that?
I have always been a salmon fan. There’s something about the butteriness of this pink fish that makes it my favorite fish but honestly, any fish can be used for this meal. My hubby isn’t the biggest fan of salmon so I think I’ll try a white fish next time I make this recipe but I am glad and happy to report, he did in fact like this meal! All this to say, make it your own if you aren’t a salmon lover.

Off topic completely but many of you have messaged or emailed about my daughter coming back to California and yes, she is! I’m so thrilled to have her and my grandbaby back! They will be living with me for a while so it’ll be a different vibe around here but I welcome it and I will be helping them get “on their feet”. I am certain I will be making more one pan meals like this Sheet Pan Salmon and Veggies because I will be trying to keep dishes at a minimum, while keeping my whole family fed with healthier meals! And be on the look out for more kid friendly ideas as I’m going to have a little toddler around so that’ll be fun to change things up!
And speaking of daughters – my other daughter got a call to audition for the role of Jasmine for the Broadway musical Aladdin! What the?!?! She’s so excited but nervous at the same time (clearly!). My little thespian daughter is getting out there and pursuing her dreams and I am so proud of the fact that she’s getting call backs and being pursued by professional agencies. It’s such a hard business to get into and I’m proud of the fact that she’s not giving up! I’ll keep you posted on that and though it’s a long shot, it’s so exciting to know she’s even considered! Just thought I’d share because these are 2 big things going on in my life!
Ok! Back to the Sheet Pan Salmon & Veggies {paleo, whole 30} meal! If you’re struggling to get meals together and/or need a quick “toss everything in” OR just love salmon, try this! You could even try another veggie as well. As always, make it your own use your own variations and let me know all about it!
- 4 - 4oz wild salmon
- 8 oz asparagus spears
- 1 pint grape or heirloom tomatoes
- 1/2 cup butter, melted
- 4 cloves garlic, minced
- 1/2 lemon, juices
- 1/2 tsp salt
- 1/4 tsp pepper
- Sprinkle favorite Italian Seasoning
- Preheat oven to 425 degrees.
- In a small bowl, combine the butter, garlic, lemon juice, salt and pepper.
- Brush on melted butter mixture onto bottom of large sheet pan. Lay the asparagus, salmon and tomatoes on the prepared pan.
- Using a tablespoon at a time, drizzle the butter mixture (leaving at least a few tablespoons behind) onto the asparagus and tomatoes and mix with hands to make sure all veggies are coated. Then brush on the butter mixture onto the salmon....again, leaving some butter left in bowl for serving.
- Sprinkle your favorite Italian Seasoning blend onto the salmon. Bake at 425 degrees for 12 minutes.
- Serve, drizzling remaining warm butter onto salmon.
