I’m all about the ease with my meals these days! Can you tell? This very recipe, ‘Sheet Pan Sausage & Peppers’ is right on target with what I’m doing lately in my kitchen. Let’s get dinner in and out of the oven and onto the table as quickly as possible, without sacrificing our healthy lifestyle.
Get Me In and Out!
Being a food blogger, I spend lots and lots of time in the kitchen and sometimes when it comes to necessities (like our actual meals), I am burned out and want to get in and out as quickly as possible. It’s fun creating and tweaking recipes but I’m not gonna lie, when it’s time to put a meal on the table, I sometimes just wanna throw my hands up in the air and be done with food and dishes! So here’s where meals like this Sheet Pan Sausage & Peppers come in to play.
Now – you may not be a food blogger and you’re not in the kitchen as much as I am BUT I know many people who don’t like spending any time in the kitchen …..or are busy mom’s/families and need to get a healthy meal on the table within time constraints. Trust me, I’ve been there. I remember trying to figure out when I was going to feed my kids between my son’s practice and my daughter’s cheerleading, all the while carrying a toddler on my hip as we rush from one field to another. And then there was homework! Dinner was often out of a box and I cringe at the thought of all that I fed my kids back in the day. So yes my friends, I get the craziness that falls into our lives and that’s why I’m hoping to help you get a healthier meal on the table, all the while doing your best to keep your family’s schedule as seamless as possible.
Prep Ahead Tip
This Sheet Pan Sausage & Veggies recipe can be (and quite frankly should be if you’re really in need of a quick and easy meal!) prepared ahead of time. All the veggies can be sliced up on your “free day” and put into a container in your fridge or freezer ziplock and into your freezer. The day of, it’s an easy toss onto your pan with the sausage and into the oven! (If you do choose to freeze, make sure to defrost and let sit on paper towels to drain moisture before putting onto your sheet pan). The Cleaner Meat
My sausage of choice is from Buy Ranch Direct – Diamond Mountain Ranch because not only is it incredibly delicious but their meats are 100% grass-fed and grass-finished. The meats are dry-aged to tender perfection and flash frozen for maximum freshness! The ‘cleaner meat’ is truly natural and never uses steroids, hormones, antibiotics or injections of any kind! It’s important to me to know that these animals are humanely raised! All that said, the sausage is freakin delish! But obviously any sausage of choice will do!
If you always seem crunched for time around the dinner hour, I highly suggest this recipe. It was eaten up quickly by my family ….even my sweet little grandbaby kept reaching for more! Double up for more or if you just want leftovers (such a good idea if you’re like me and like to take ‘dinner to work for lunch’). Just toss in 2 Sheet Pan Sausage & Peppers at once and be done with it! So go have at it and enjoy!
- 4 4 sausage links-1 lb. (spicy Italian sausage)
- 2 red bell peppers, sliced
- 2 yellow bell peppers, sliced
- 2 green peppers, sliced
- 1 small red onion, sliced
- 2 tbsp olive oil
- 2 tsp Gyro or Italian Seasoning
- 1/2 tsp salt
- 1/2 tsp garlic
- 1/tsp pepper
- Fill a medium sized pot 3/4 full with water & bring water to a boil.
- Once boiling, turn down to a low boil and place sausage in pot. Let it go for 10 minutes.
- Preheat oven to 425 degrees.
- Slice veggies* - place on sheet pan and toss around with olive oil. Season with salt, pepper and garlic power. Sprinkle on 1 tsp of the Gyro or Italian Seasoning.
- Take sausage out of pot and set each one on top of seasoned bell peppers. Put into 425 degree oven and bake for 20 minutes.
- Once done, let it sit for a few minutes and sprinkle on remaining 1 tsp of Gyro or Italian Seasoning. Slice sausages on cutting board and toss back in with peppers.
- Serve with cauliflower rice or wrap in your favorite tortilla or paleo/gluten free bread!
- *Prep ahead by slicing up veggies ahead of time so the night of your meal, it's just a matter of tossing everything on a sheet pan!
