There are times when calling something I whip up in the kitchen a “recipe” seems silly, just as these Stuffed Avocado Taco Bowls seem to be. They are deliciously good ….don’t get me wrong! But writing it up and calling it a recipe seems a little overstated. That said, I had several people ask about it and what better way to keep the idea tucked away, was to write it up and put it on the blog. You can also save it to Pinterest so you can have it stored for future use!
I made these quickly one Tuesday night and yes, I remember it was a Tuesday because I posted it as a #tacotuesday on my Instagram. As you know, my daughter and granddaughter moved in with us a few weeks back and I wanted a quick meal to toss together so we could all sit and chat about our days, as they were getting unpacked and adjusted to being here. All the while trying to make something higher in healthy fats as my other daughter is living a keto lifestyle. These Stuffed Avocado Taco Bowls were just the thing! Super quick and easy and filed with healthy fats! They all fall under ‘paleo, whole 30 and keto’ style “diets” because it’s really just eating real food and that’s pretty much what all these food lifestyle approaches are.
Speaking of my daughter(s) and granddaughter – just a quick mention to say that we are all adjusting and I love having them here. Whenever I thought of my daughter moving back to California (she lived in North Carolina for a couple of years), I didn’t imagine she’d move in with me BUT all is well and I’m thrilled to be a part of their everyday life! I know she’ll be out on her own again someday but I’m glad we have the space to help her out. Trust me – it’s a lot of adjusting for me, my hubby and my other daughter! We had a quiet house with little to no messes. And for me, I used to walk into a home with no one stirring about. My hubby works late nights a few nights per week and my daughter is rehearsing a lot, working or out and about with friends so this has been a huge change of walking in and hearing my sweet Mazzy welcome me home! As well as seeing toys, crumbs, cute little shoes laying about and hearing Moana in the background. If you read my blog post ‘My Happy‘, you know that I have a little OCD when it comes to having things be ‘just the way they’re supposed to be’ and this is a true test of my willingness to “let it go” …..not to sweat the small stuff and to treasure the moments! It takes some talking to (myself) but it’s working and I (along with essential oils!) am happy to say that I LOVE having them here and we’re making the best of it! I will add that my daughter knows how I like to have the house in order and she’s really doing her best to keep up with it – but as you all know who have toddlers of your own, it gets exhausting to constantly pick up and/or battling the little one to pick up after themselves.
I digress. I’m happy to say that these Stuffed Avocado Taco Bowls were a hit with both my daughters and my grand baby! I mean, what’s not to love??! I take the easy way out and just use Primal Palate Taco & Fajita Seasoning Packet and honestly, it’s the easiest and most delicious way to season up your meat! I mean it when I say that this meal was quick! So while I hate to call it a “recipe”, it’s written up for safe keeping for you all to grab and save it in your own place (Pinterest) so you can whip up a good and nutritious dinner in a flash too! It’s a a crowd pleaser (but don’t feel bad about stashing it all away for yourself) – seriously!
- 4 large avocados
- 1 lb ground beef
- 1 package Primal Palate Taco &
- Fajita Seasoning (alternatively, 2
- 2 tbsp’s of your favorite taco
- seasoning)
- 1/2 cup diced tomatoes
- 1/4 cup diced green onion
- 1/4 cup roughly chopped cilantro
- In a large skillet, brown ground beef making sure to break up into crumbles.
- Add package of Taco Seasoning and stir to combine. Let seasonings meld in with meat on low flame for 10 min, stirring occasionally.
- Dice up veggies. Slice avocados in half and take out seed. Scoop out a little of the avocado, making more room for the seasoned beef. Smash all of the scooped avocado to dollop on top off each “boat”.
- Spoon meat divided evenly into each avocado half. Top with tomatoes, green onion and cilantro. And if you didn’t eat the scooped out avo, put a dollop onto each stuffed avocado boat.
