These stuffed portobello mushrooms happened on a whim and thought I’d share it with you because everyone in the house loved! Super easy, quick and yummmm!
All you need is a few ingredients and what made it super easy, is that I prepped the meat mixture yesterday so this was literally dinner in minutes!
Mushrooms are a great source of vitamins and minerals. Also, there may be a potential link between mushrooms and a decreased likelihood of tumor growth, as well as being the leading source of the essential antioxidant, selenium. Antioxidants, like selenium, protect body cells from damage that might lead to chronic diseases.
Stuff with some grassfed ground beef, healthy fats (guacamole!) and you’re good to go!
- 1 lb. ground grass-fed ground beef
- 1/2 onion, diced
- 2 garlic cloves, minced
- 2 tbsp tomato paste
- 1 tsp garlic powder
- salt & pepper to taste
- 4 large portobello mushrooms
- 2 tbsp ghee
- 1 tsp garlic powder
- salt
- In a large pan, brown the ground beef.
- Add chopped onions & garlic about 1/2 way through cooking beef......add seasonings & tomato paste. Mix thoroughly.
- Take out stem and wipe down scales of mushrooms (you can chop up stems and add to meat mixture if you desire)
- In another large pan, melt ghee and add mushrooms, cap side down.
- When mushrooms look like they are softening (about 5-7 min), sprinkle garlic powder & salt to taste, on inner part of mushroom and flip over. Cook up about 5 min, until softened a bit but not falling apart.
- Plate the mushrooms and stuff with the beef mixture - top with guacamole and/or salsa!
