If you’re looking at this photo of these Supergreens Energy Cups and thinking, “Wow. Those don’t look very appetizing” well, I don’t blame you. Not that I’m the best photographer in the world but these little cups of nutrition were very hard to get a decent picture of! But in this case, a picture doesn’t paint 1000 words because the taste far outweighs the look.
I have shared a bit about Paleo Valley Organic Supergreens in past blog posts. I have a Coconut Butter Powerball recipe using the same Organic Supergreens as well as a Chia Supergreens Bowl. Both recipes are filled with deliciousness and nutrients! I personally love the convenience of adding this to recipes to amp up nutrition but can easily just be added to water, favorite milk or by whipping into a shake and you’ve got yourself covered with vitamins and minerals in one drink!
I’m not gonna lie. I tried to make these into fat bombs by way of a ball. That was a fail. To be honest, it was quite a while ago and I don’t remember “the fail” but when I decided to just divide these into mini muffin liners, I did a happy dance! They turned out perfectly and were a lot easier to not only assemble but easier to hold and nibble on.
These Supergreens Energy Cups are something I keep on hand in my fridge. There are days when you just need a little pick me up and these guys fit the bill. I would actually step out on a limb and call them dessert. Don’t get me wrong, I love my dark chocolate but I’m never disappointed when I pop one of these into my mouth! Not only are they filled with the Organic Supergreens but they are filled with healthy fats and sugar is low as the whole recipe only calls for one tablespoon of honey.
If you’re trying to get more nutrients into your little one’s diets, I highly suggest these Supergreens Energy Cups! It’s not easy getting children to eat veggies and/or greens but maybe they’ll be more apt to bite into something that looks like a treat. What they don’t know, won’t hurt them and we’ll be the wiser! My sweet grand daughter will be staying with us for a while and I’m definitely going to be “sneaking” this into her meals to help amp up her vitamin and mineral intake. I also love Paleo Valley Beef and Turkey Sticks. They are my go-to for bringing along a snack if I know I’ll be out and about for a while. They are perfect for little kiddos too! Again, don’t let the look of these Supergreens Energy Cups fool you. The benefits and taste of these bites will definitely keep you coming back for more!
- 1/2 cup almond butter (or cashew butter)
- 2 tbsp coconut oil, melted but cooled
- 1 tbsp honey
- 3 tbsp shredded coconut
- 1 tbsp Paleo Valley Supergreens
- Mix all ingredients using whisk.
- Using 1 tbsp, dollop into a mini muffin tray, using mini liners.
- Refrigerate for 30 minutes.
- Keep these stored in refrigerator.
