Do you ever look in the fridge and find food you forgot was there? I certainly do! I bought a pack of tomatoes and forgot about them for a few days! Thankfully as I shifted things around to look for something else, I noticed the package of tomatoes. It’s the worst when you notice is waaay too late and the veggie or fruit has basically turned to mush, isn’t it? I had to think fast because I wasn’t going to be around the following few days so I wanted to use the tomatoes up, right then and there. Tomato Chips {Keto} were born!
As we munched on these, we felt there were reminiscent of pizza! I do add parmesan cheese to these crisps so they aren’t a true paleo recipe but if you tolerate parmesan ‘ok’, you’ll love these! I have to pick and choose when I eat cheese and definitely in moderation but these did not have an effect on me at all. I was happily munching away on these little “pizza” snacks. They were even taken up a notch when I dipped in ranch dressing! So yumm! Primal Kitchen Foods has a great Ranch if you’re interested in a cleaner version.
I had the genius idea of adding these Tomato Chips {Keto} to a pizza crust. I mean, it gave me all the feels of pizza so why not use it as a topping? Since the tomatoes were the main focus, I opted to use a cream sauce vs. a tomato sauce — and OMG! It was so good you guys. My family devoured the pizza up in minutes. But being the great “genius” that I am, I didn’t write anything down. So ….there’s no recipe for the delicious pizza that had everyone “mmmm, mmmm-ing” all over the place. I will definitely recreate and get that recipe on the blog but these Tomato Chips are a stand alone snack anyway so there’s not too much to fret about. (Even though I’m kicking myself for not being more diligent!)

I’m sure these Tomato Chips {Keto} could be made in a dehydrator but I just stuck them in the oven for quite a while. I do have a dehydrator so I will try them out using that method and update this recipe. You will be leaving these tomatoes in the oven for a couple/few hours but it really is worth it!
If you like sun-dried tomatoes, you will definitely love these Tomato Chips. They are quick to make but as I said, take some time in the oven so you can go about your chores or kick your heels up and watch a movie while these guys cook up. And be on the look out for that pizza recipe!
- 6 roma or heirloom tomatoes, thinly sliced
- 2 tbsp Italian Seasoning
- 2 tbsp parmesan cheese, grated
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp sea salt
- Preheat oven to 225 degrees.
- Combine the Italian Seasoning, parmesan cheese, garlic powder and salt in a small bowl.
- Arrange tomato slices on baking sheet, making sure they are in single layer and not overlapping. Brush olive oil onto each slice, turning over and repeating on both sides of tomato slices.
- Sprinkle the seasoning/cheese mixture over each slice.
- Bake at 225 degrees for 2-3 hours*
- Take out and let rest on cooling rack for just a handful of minutes. Eat as is ...dip into ranch dressing or top a pizza!
- *This depends on the slices of tomatoes. I've had to take some tomatoes out before others because they crisped up quicker due to thickness.
