Who loves waffles? I have to admit, I wasn’t a big waffle, or even pancake fan in my younger years….I always loved my eggs, bacon and potatoes! When I had children, I found myself making them for the kids and taking nibbles here and there. Of course, once I started eating paleo, I pretty much figured waffles and/or pancakes would be a long lost breakfast. I started seeing recipes on different paleo blogs for these little treats and I realized I could make waffles and eat them too! I stumbled across Brittney Angell’s ‘Extra Crispy Paleo Waffles‘ and I pretty much died. The flavor and textureis perfection and the best part is, you can double the batch and freeze for an easy go-to during the week. Just pop into toaster and you’ve got delicious crispy waffles, as if they were made fresh that morning!
AND — you can use the waffles for a savory meal. Just omit the sweetener and add some garlic powder or even a spicy seasoning & you’re set! Used these as “bread” to make tuna sandwiches. Grill them and add a little Kerrygold Cheese and you’ve got a tuna melt. Put an egg on it! Love how versatile these waffles can be.
One day, I was rushed but really had the craving so made up the same waffle batter but poured onto my griddle to make pancakes and helloooo???!!!??? They were equally as good! Fluffy on the inside with a little crunch on the outside! Oh man – I’m thinking I need to get up and make them now! Mouth is watering…so I’ll let ya go but leave you with this!
