Well, I surely hope you all had a nice Easter and if you don’t celebrate Easter, a nice Sunday and enjoyed your day with family, friends and food! I personally had a very low key day with my hubby and enjoyed every minute of not having specific plans. My son, hubby and I just kind of hung out. We grabbed lunch out, caught a movie and had duck for dinner that I had going in the crock pot all day 🙂
I didn’t post much prior to Easter as I was just getting back into the swing of things. I was in North Carolina the week before — getting home on Sunday afternoon and with getting right back to work/schedules on Monday morning, I honestly was in catch up mode with daily life! It was all I could do to throw dinner together – so I wasn’t very inventive in the kitchen when it came to thinking of Easter posts. I did get a Lemon Curd up before Easter that I’m sure you saw ….and if you didn’t, be sure to check that out because it will not only be yum for a summer nights treat but I think it would also make great little desserts for a baby/bridal shower.
My daughter was quite creative with her Easter Egg decorating with my grand daughter! She decorated her hardboiled eggs with natural dyes (red cabbage, onion peels, turmeric and coffee). She pressed the leaves/flowers in a book beforehand to release the oils and they somewhat adhered to the eggs ….she then put them into stockings and tied to keep the leaves/flowers in place and placed the eggs into the “dyes” over night. Okay — enough babbling! I know many of you might have some hard boiled eggs laying around and sometimes you get tired of them around this time of year! I know when I had all 3 kids hunting for eggs, we had eggs in that fridge forevvver! I couldn’t even use them fast enough before having to toss some. If you’re having a hard time trying to use them up in different ways, I suggest trying my ‘Deviled Eggs w/Guacamole & Sausage‘ recipe. I love deviled eggs but I added avocado to the yolks for my daughters baby shower and it was a huge hit! I then made them for breakfast and added sausage ….and omg! LOVE!
